Coffee brewing at home: mechanics, extraction, and control

Dial in your cup. We break down domestic coffee extraction across five essential systems: pour-over, espresso, French press, AeroPress, and the stovetop moka pot. Learn precise ratios, grind micron boundaries, flow dynamics, and thermal variables.

PERCOLATION

Pour-Over: Precision Drip Control

Hario V60, Kalita Wave, and Chemex systems. Pour-over relies on continuous gravitational percolation through paper media. Master water stream agitation, bloom degasification cycles, channel avoidance, and medium-fine particle distribution to achieve crisp organic acidity and 18–22% target extraction yield.

PRESSURE

Espresso: 9-Bar Physics

High-energy mechanical extraction through compressed pucks. Dial in 1:2 ratios within 25–30 seconds, regulate distribution, and balance solubilisation.

IMMERSION

French Press: Full Steeping

Zero bypass, total immersion, and metal mesh retention. Retain aromatic lipids and heavy colloidal particles for uncompressed body and rounded profile.

HYBRID

AeroPress: Pneumatic Force

Pneumatic pressure meets rapid full immersion. Manipulate brew steep duration, plunge velocity, bypass dilution, and inverted orientation parameters.

VAPOUR

Moka Pot: Steam Pressure

Expansion chamber thermodynamics. Utilise 1.5 bars of saturated steam displacement to generate concentrated, viscous liquor without scorched notes.

FUNDAMENTALS

Extraction Rulebook

Grind Particle Size

Finer grinds increase surface area exponentially, accelerating dissolution rate. Coarser grinds retard extraction and invite bypass channels. Align your burr setting precisely with contact duration.

Thermal Kinetic Energy

Water between 90°C and 96°C liberates soluble acids, lipids, and aromatic carbohydrates. Dropping below 88°C under-extracts, while excessive heat extracts astringent chlorogenic decomposition products.

Brew Mass Ratio

Weigh every dose. Standard percolation runs on a baseline of 60 grams per litre (1:16.6). Immersion demands tighter 1:14 ratios, whereas espresso concentrates mass to 1:2. Never guess brew volume.
